"Something for your Hot Chocolate"

Need to keep warm during these cold months? What better way than to snuggle up with a cup of hot cocoa??

Complete with a marshmallow, of course! :)

This fun recipe is low effort, maximum effect.

This recipe appears in the Something book and was submitted by my friend Debbie Knicos, a phenomenal home cook and baker... so, I have to admit, I might be a little biased. ;)

Homemade Marshmallow 2 tablespoons cornstarch 3/4 cup cold water, divided 2 packets unflavored gelatin 3/4 cup white sugar 1/2 cup light corn syrup 1/4 teaspoon vanilla extract Dust the something mold with cornstarch and set it aside. Whisk together 1/2 cup cold water, with 2 packets of gelatin and set aside. Stir together the remaining 1/4 cup of cold water, white sugar, corn syrup, and salt in a small pot, over medium heat until it reaches 240°F. When ready, mixing on low, slowly add a steady stream of the hot liquid down the side of the bowl where the gelatin mixture is waiting. Add vanilla. Increase mixing speed to high and mix for 12-15 minutes. It will be warm and fluffy.


Immediately scrape the mixture into a piping bag and pipe into something mold. Pat down into something mold with fingers.


Let it sit for 2 hours.
