Peanut Butter Pretzel
1/2 cup creamy peanut butter
1/4 cup plus 1 tablespoon powdered sugar
1 tablespoon unsalted butter, room temperature
1 cup crushed pretzels
6 ounces chocolate, melted
Stir together peanut butter, butter, and powdered sugar. Add pretzels and stir to combine.
Press mixture into mold about 3/4 of the way to the top and freeze for 30 minutes or until firm. Remove from freezer and pour melted chocolate into the mold and set in the refrigerator for 5 minutes.
Carefully remove from the mold when the mixture is still very cold. Roll any extra mixture into 1 inch balls and freeze for 20 minutes before dipping in melted chocolate.
