"I'm On a Roll... err, Cornbread?"

If there's one thing I know... it's all-things-corny. (LOL)


I hope your New Year is off to a great start and you are staying healthy and safe!


Here is another easy recipe for someone who loves a good dad joke (or if you're looking for the perfect addition to your next BBQ). It's, by far, one of my favorites.

Homemade Cornbread


1/2 cup cornmeal

1/2 cup all-purpose flour

1 1/2 tablespoons sugar

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 large egg

3/4 cup buttermilk

3 tablespoons unsalted butter, melted

1/4 cup creamed style sweet corn


Preheat the oven to 425°F.

Lightly spray Something mold with cooking spray.


In a large bowl, mix together the cornmeal, flour, sugar, baking powder, baking soda, and salt.


In a separate bowl, mix together the eggs, buttermilk, butter, and sweet corn.


Pour the buttermilk mixture into the cornmeal mixture and fold together until there are no dry spots (the batter will still be lumpy).


Pour the batter into the Something mold.


Bake until the top is golden brown and a tester toothpick inserted into the middle of the cornbread comes out clean, about 15-20 minutes.


Remove the cornbread from the oven and let it cool for 10 minutes before turning the mold over and popping the cornbread out of the mold.
