"Something from The Garden"

Living in New York City for a large chunk of my life, I hadn't gotten the chance to have much of a garden, until I moved to Pennsylvania for a few years. I love the *idea* of being able to farm a zucchini, just for this recipe!! Autumn is here, and so is harvest season, ( check out my harvest from last year :) if you are lucky enough to have some veggies growing in your backyard, this might be the recipe for you!





Zesty Zucchini Bread


1 1/4 cup finely grated zucchini

1 egg, beaten

1/4 tsp onion powder

1/4 cup parmesan cheese

1/4 cup seasoned dry bread crumbs

dash black pepper


Preheat oven to 400°F.


Grate zucchini then place in a dish towel and squeeze well to remove the excess liquid.


Mix all ingredients in a bowl.


Fill the mold to the top with the mixture. Bake 16-18 minutes, or until the top is browned and set.


Turn out and bake for a few more minutes until the other side is browned.
